3 TBSP olive oil
1 small oinion chopped
3 cloves garlic minced
1 pkg 10 oz frozen spinach, thawed, squeeze to remove liquid.
3 cups cooked rice
1 cup extra sharp cheddar cheese, grated
1/2 tsp pepper
1/4 tsp salt
4 large eggs
1/4 cup milk
Coat 9 in. pan with cooking spray.
Heat oil, add oinion and cook 5 minutes or until oinon is soft.
Add garlic and spinach, cook 1 minute.
Transfer to bowl and add rice, cheese, pepper and salt.
Whisk eggs and milk in separate bowl.
Stir egg, milk mixture with spinach, rice mixture.
Place in 9 in. pan.
Bake 25 minutes.
