s Pecan Encrusted Pork Tenderloin   

A great receipe for preparing Pork Tenderloin quickly and keeping the meat tender and moist.

Yields: 8 Servings


1 pork tenderloin cut in 1 1/2 - 2 inch slices
1 cup ground pecans
1 cup bread crumbs ( I like to use the Progresso Italian breadcrumbs)
1/4 cup brown sugar (firmly packed)
2 large eggs.

Mix together pecans, bread crumbs and brown sugar in a gallon size zip lock bag.
Beat two eggs together in a bowl.
Dip slices of pork tenderloin in the egg. Place egg coated pork slices in the zip lock bag of encrusting mix and coat thoroughly.
Place encrusted pork slices in a casserole dish lightly coated with cooking spray or olive oil
Bake till done.
