s Key Lime Pie or Tarts   

Captain Grey Beard's favorite dessert. This recipe was given to Chef HiHo from Rebecca, one of the kitchen staff at Coco View Resort on the Island of Roatan in Honduras after she made a whole pie just for GB so that he could have key lime pie for dessert everynight while there!

Yields: 8 Servings


2 cans sweetened condensed milk
1 cup key lime juice

Whisk together the sweetened condensed milk and the key lime juice.
Pour into the pie crust shell.
Bake at 350 for 10 minutes. Allow to cool and then refrigerate until ready to serve.

Note: Nelly & Joes or Mrs. Biddle's lime juice are both good brands to use
This recipe is for a full 9" pie crust. I cheat and use the Keebler ready made graham cracker pie crust or package of 6 tart shells. Note: if you use the small individual tart size crusts (6) half the recipe!
