Chef HiHo's Galley Delights

s Coconut Rice   

A Jasmine rice with a pleasing hint of coconut.

Yields: 6-8 Servings


2 cups Jasmine Rice

1 1/2 cups water

1 can coconut milk

1 tsp salt

1 tsp sugar

1 TBSP fresh Cilantro, chopped. Optional

In a medium sized pot, rinse Jasmine Rice until rinse water is clear, drain excess water.
To the pot add water, coconut milk, salt and sugar.
On high heat allow mixture to boil. Once boiling turn heat to low and cook covered for 20 minutes.
Garnish with optional chopped Cilantro.
