s Coconut Encrusted Mahi Mahi s   

Yields: 6 Servings


1/2 cup shredded coconut
1/2 cup corn flake crumbs
1 egg
6 pieces of Mahi Mahi

Lightly grease or spray a baking pan. Pre-heat oven to 350 degrees. Mix the coconut and corn flake crumbs in a gallon size baggie. Dip the pieces of Mahi Mahi in egg and place in the baggie to coat with coconut mixture. Place the Mahi Mahi in the baking pan and bake for 20-30 minutes depending on the thickness of the Mahi steaks.
